The Chouriço is a Portuguese pork sausage with a lightly smoked flavor. The best way to enjoy it is grilled over a flame—chouriço assado. More than a dish, it's a true culinary ritual!
When you order chouriço assado in a restaurant, the server brings the sausage to your table in a clay dish filled with aguardente (brandy), then lights it in front of you. You grill the sausage to your liking. For a perfect chouriço assado, the outside should be slightly charred and crispy.
