Chouriço is a Portuguese pork-based sausage with a slightly smoky taste. The best way to enjoy it is as a flame-grilled assado de chouriço. More than just a dish, it's a culinary experience in its own right!
When you order chouriço assado in a restaurant, your waiter brings the sausage to your table in a clay dish topped with brandy. Then he sets fire to the brandy right in front of you. Once on the table, you can cook the chouriço for as long as you like. For a perfect chouriço assado, the outside of the sausage should be slightly charred and crispy.
