Egg pudding (Pudim de Ovos) is a traditional dessert in Portugal. It’s a popular homemade treat, made with simple and rather… nourishing ingredients!
This dessert is very easy to prepare, quick to make, but it must be enjoyed cold. It’s best to prepare it the day before serving.
Ingredients (serves 6)
- 400 g (14 oz) sugar
- 10 eggs
- 1/2 liter (2 cups) whole milk
- Liquid caramel (to taste)
- 200 ml (3/4 cup) Port wine (optional)
Preparation
- Crack the eggs and whisk them together with the sugar in a large bowl.
- Add the milk and Port wine, then mix well until smooth and lump-free.
- Pour caramel into the bottom of the pudding mold.
- Pour in the egg, sugar, and milk mixture, then close the mold with its lid.
- Place the mold in the oven, in a baking dish half-filled with water, to cook in a bain-marie.
- Bake for 45 minutes at 200°C (390°F).
- After baking, let the pudding cool, then refrigerate for at least 3 hours before serving.
The great thing about this dessert is that it only requires ingredients you usually have at home: sugar, eggs, and milk. The only essential item is the proper pudding mold, which allows it to bake perfectly in a bain-marie.
